  3. Spread the tomato and sweet potato sauce evenly over the tortilla, leaving about 1/2 inch around the edges.
  4. Sprinkle the chopped vegetables on top of the sweet potatoes.
  5. Sprinkle the shredded cheese on top of the vegetables.
